Many years ago in the heart of Cajun Country, JB Hicks developed a unique seasoning blend that is now world-famous. Darrell Hicks took his father's seasoning and his mother's passion for cooking and the rest is history.
Darrell, his wife Ann, Son Darron, and the rest of the Hicks Smoked Meat team have cooked for many fortune 500 companies and some of the most powerful people in the country. ALLTEL, Anheuser Busch, Wal-Mart, John Deere, FedEx, Bass Pro Shops, and the NFL are some of the organizations that have had the pleasure to go through a Hicks buffet. Sam Walton once said that his favorite food was Hicks World Championship Smoked Meats.
Hicks smoked meats won the Memphis in May World Barbecue Championship on the banks of the Mississippi River in 1987. Then went on to win the World Pork Expo in Des Moines, Iowa.

One of our most popular items. We wrap a large, boneless, skinless chicken thigh with bacon. Sprinkle it with our award-winning seasoning and smoked it with hickory. Topped off with a little light maple BBQ sauce and it's world-class all the way.
We start with a premium half chick by adding our award-winning seasoning smoked with our green hickory wood. Chilled and shrink packed ready for delivery. Just heat and eat.
A customer favorite. Our leg and thigh quarters are seasoned with our award-winning seasoning and hickory smoke that brings out a special flavor that is juicy and tender. Guaranteed good.
We take a blend of special rice, vegetables, chicken, and sausage and add a blend of southern spices at its best. This will be shipped in two 3lb bags which will easily serve 10 people. Southern flavor at its best.
We lightly rub with our award-winning seasoning, boneless, skinless, white, and dark meat. We smoke until it gets the right smoky tenderness. We start with a premium "bone-in" Boston butt. We apply our award-winning seasoning and smoke it for 11 hours with green hickory wood. We then remove the bone and chill down immediately to retain all moisture, flavor, and tenderness in the butt. This item is great as a dinner item, sandwich meat, or BBQ nachos. The taste and flavor are unbelievable. BBQ smoked pork at its best.
Pre-cooked, hickory-smoked bone in port butt steaks are cooked low and slow to produce a moist and flavorful Center of the Plate or lunch item, sure to be a new favorite. Cut from the shoulder of the pig most commonly used for premium pulled pork, these one-of-a-kind pork steaks are an offshoot of St. Louis style BBQ and have quickly gained popularity in the competitive market nationwide. Lightly rubbed with our award-winning seasoning and cooked with just the right amount of green hickory smoke. These meaty 10-12 oz steaks are lightly sauced with hickory-smoked sauce to allow for customized flavoring. Fall apart tender and the flavor is unbeatable.
We simply take our premium pulled pork and add special blend of hickory sauce. Therefore you have premium pulled port with sauce. This product has a fantastic flavor profile while using much less sauce than other competitors.
We take our own whole boston butts and pull it, chill it, and shrink pack it. It comes fresh to you full of moisture, flavor, taste and tenderness. This product makes great plate ups, sandwiches, and fantastic bbq nachos. It adds a flavor profile to pizza like nothing you have ever tried before.
This product is one of the lowest-calorie content items on the market today. We simply buy premium center-cut pork loin then add our seasoning blend and smoke over green hickory wood, chill and shrink pack which seals all the moisture, tenderness, and flavor. A great item for the center of the plate presentation, is sandwiches, or pork loin & biscuits known as the healthy biscuit sandwich.
We hand select these St. Louis style ribs to meet our high-quality standards. Then rub them down with our award-winning seasoning. We then smoke with green hickory wood until they are perfectly tender. A great example of moisture, taste, and tenderness.
We take premium Boston butts, add our seasoning blend, then grind and stuff them into collagen casings. Then smoke over green hickory wood, chill and shrink pack. What is unique about these sausages is we use the same recipe that was used over 95 years ago. There is absolutely no artificial filler in these homemade smoked sausages. This is a recipe that I will hand down to my son and grandson and I will never let it be challenged by poor quality.
